Healthy Choices


Don't make that face.  It was delicious.  And I know that because I'm getting my taste buds back.  Some days are better than others, but luckily for me, on the day we made this, they were working.

I love roasted beets and the husband and I are trying to incorporate more veggies into our diets, so we are experimenting with Kale.  This is a roasted beet and kale salad with bacon.  Because bacon makes everything better.

Eating more veggies is part of my don't die from the cancer and leave my children to the sperm donor and his ho plan.  Even if you don't want to fully participate in this plan with me, you must at least one time try this recipe.  You will become a kale lover for sure.

Roasted Beet and Kale Salad with Bacon

4-5 small beets, washed and trimmed
1 large bunch of kale, washed and roughly chopped
4 pieces of bacon, chopped
salt and pepper to taste

After washing and trimming the beets, I wrapped them in aluminum foil and baked them in the oven at 350 degrees for an hour.  Once they were cooled, I peeled and chopped them.  In a large skillet, cook the chopped bacon over medium heat until crisp.  With a slotted spoon, remove the bacon, reserving the drippings.  Add the chopped kale to the bacon fat and cook until wilted, approximately 15-20 minutes.  Toss in the beets and bacon and season with salt and pepper.

That's it.  I cooked my beets in the toaster oven one day while I was grocery shopping because it has a timer and would shut off after the time I set.  That way I didn't have to worry about overcooking them.  You can also do this in advance and just toss them into the skillet with the kale to warm them back up.

I never know what to do with kale besides make kale chips or throw it in my juicer to add to a smoothie.  This is now a regular at my house.  Yes, most of my kids will eat it.  Yes, they are weird and they have always been good veggie eaters.  But the key here is bacon.  Every kid loves bacon.

Ok I will agree to try it....the 4 pieces of bacon ;) Bacon does make everything better. Although I love my veggies, beets aren't one of them and not sure about kale.

Yup, every kid likes bacon- even my kid who only eats 5 foods. Have you had mustard greens? I almost bought them at the store last week, but didn't know what to do with them. What kind of a southerner am I?

My daughter does not like bacon! Something is wrong with her. Not a big beet fan, but this does look good.

Ahhhhh....beer, butter, and bacon. The "three B's" that make everything better. I love my beets pickled, strangely enough.

Hooray for the sense of taste! Loved the line about the sperm donor.

I got beets in my CSA box yesterday and chard, so think I will try it with chard. It sounds fantastic.
Anyway, studies are showing that dark leafy greens are good for your brain when you age so when you kick cancer in the potukus you will have smarts to grow old with!
