Uses for leftover spaghetti sauce

I have made it my goal to save money on groceries.  As a family of nine, with four boys, we spend an extraordinarily large amount of money on food.  Whether you have four or nine at your table, almost everyone ends up with leftovers.  My children will eat leftovers, but it’s never enough to feed everyone, so I don’t usually serve them as a second dinner.  The boys will snack on them and I usually eat them for lunch since I abhor sandwiches.

One item that we usually end up throwing away is spaghetti sauce.  For some reason, no one eats reheated spaghetti.  I started saving the sauce and not the noodles because the noodles were the problem.  I decided to get creative with ways to use the sauce.  Here are a few of our favorites.

French Bread Pizza

I usually use the leftover garlic bread.  I spoon the meat sauce on the bread, then top with some cheese and throw it in the oven.  The kids love this so much, I’m tempted to make the meat sauce and just do this to begin with.  During summers on the ranch with my grandparents, my grandmother used to make this for me for lunch on english muffins.

Baked Ziti

If there is a larger quantity left over, I will boil some ziti and mix the sauce in with some cheese and freeze in a casserole dish.  This is great for those days when we have football games or late activities.  I can just take it out of the freezer and throw it in the oven.

Italian Soup

This is one way to use up more than just the sauce.  I take the extra veggies we have had and throw those in too.  If I don’t have any, then I just open a few cans and voila, instant meal.  I like to dice a few potatoes, carrots, an onion and some bell pepper.  I will also put in green beans and maybe corn.  By using the leftover sauce, I don’t have to add as much seasoning to the soup.  The broth I add is fairly salty and the sauce is pretty heavily seasoned.  Be sure to taste test before you add anything else.

Pizza Pockets

You can take crescent dough or french bread dough, roll it out so there are no seams and cut it into squares.  Put a dollop of sauce with a sprinkle of cheese and fold it over and seal the edges.


I take some boneless, skinless chicken breasts and put them in a baking pan.  Thin the spaghetti sauce down with a little bit of broth and pour over the chicken breasts.  Bake until cooked through.
